The Illawarra dairy breed (also known as the Illawarra Shorthorn) of cattle was introduced into Australia by dairymen who used superior bloodlines from a number of different dairy breeds, mainly the Ayshire, Devon and Milking Shorthorn.

The Illawarra cattle breed is an extremely hardy breed. They can stand a wide range of temperature variables, including temperatures exceeding 40 degrees Celsius or temperatures dropping below 0 degrees Celsius.

The Illawarra make the most out of feed and subsequently don’t require much supplementary feeding. 

This breed are excellent producers of large quantities of milk with many cows producing in excess of 40 litres per day. With 305 day lactations it is not uncommon to exceed over 15,000 litres. The milk produced by the Illawarra cattle is moderate in fat and high in protein putting it in the best position to meet the growing world demands for protein.

The Guernsey is a breed of dairy cattle originally from the island of Guernsey in the Channel Islands. It is fawn or red and white in colour, and is hardy and docile. 

The Guernsey cow was introduced into Australia because of their grazing abilities, calm disposition, calving ease and ability to efficiently produce milk with less feed. It is for these reasons that the Guernsey breed is an ideal candidate for intensive grazing.

The breed is perfect for pasture-based milk production.

The Guernsey breed is famous for producing high-butterfat, high-protein milk with a high concentration of beta-carotene. Another advantage of importing this breed into Japan is their size to feed ratio. Being of intermediate size, they consume approximately 20-30% less feed per kilo of milk compared to larger dairy breeds.
